Fresh Leeks is a long bundle of leaf sheaths with a mild, onion-like taste. In its raw state, the vegetable is crunchy and firm. The edible portions of the leek are the white base of the leaves (above the roots and stem base) and the light green parts.
Leeks can help regulate intestinal function due to their high fiber content. Due to its anti-inflammatory and antiseptic properties, leek juice is a valuable aid for treating arthritis, gout and inflammation of the urinary tract.
Storage and Uses
Fresh leeks should be stored unwashed and untrimmed in the refrigerator, where they will keep fresh for 1 to 2 weeks. Keeping them in perforated or loosely wrapped plastic will help them to retain moisture.
Add finely chopped leeks to salads or sliced leeks to your favorite omelette or frittata recipe.
