Ken Gourmet has a Shelf life of 9 months and has;
• Excellent consistency and stability even under cooling/freezing conditions, without drying off nor cracking.
• Excellent performance in fillings, toppings, decorations and any other confectionery application. In the preparation of mousses and bavaroisses it can be also mixed with acid ingredients (lemon, strawberry, etc.) without curdling nor changing its texture.
• When cooked, it provides a creamy texture and maximum stability. It does not curdle when heated and it is stable in processes such as bain-Marie, re-heating and in addition of any kind of ingredients (liqueurs, acids…) UHT blend of buttermilk, vegetable & dairy fat for whipping, cooking and pouring 1ltr
Buttermilk, fully hydrogenated vegetable fat( palm kernel/palm), cream, lactose, emulsifiers (E-435, E-471,Soy lecithin), stabilisers (E-415. E-407), salt and colour (beta carotene)
Allergens: contains milk and its derivatives (including lactose) and soy and products made from soy.
Storage: Keep refrigerated between 0 degrees and +5 degrees Celsius. Once opened, use within 3 days. Do not freeze.
Use: Shake well before use. For best results in whipping, add sugar to taste and whip at medium speed until achieving the desired texture.
